- 1 pint cherry tomatoes
- 2 large cucumbers, peeled and sliced
- 1/4 red onion, cut into thin strips
- 1 red bell pepper, cut into thin strips
- 20 kalamata olives
- 8 ounces feta cheese
- 1/2 cup extra virgin olive oil
- 2 tbsp red wine vinegar or lemon juice
- 1 tsp oregano
- salt and pepper, to taste
Add all veggies and olives to a bowl.
Top with feta cheese, olive oil, lemon juice (or vinegar), and oregano. Salt and pepper, to taste.
