Garlicky Curry Chicken Salad with Currants
Ingredients
- 1 grilled chicken breast (chopped)
- 1 stalk celery (chopped)
- 1/4 cup toasted hazelnuts (chopped)
- 1/4 cup currants
- 1/4 cup mayonnaise (to start)
- 1/4 tsp curry powder
- 1/8 tsp onion powder
- 1/4 tsp aleppo pepper
- 2 scallions, thinly sliced
- Salt & Pepper to taste
- 4 large lettuce leaves
Instructions
- Mix together all ingredients except the lettuce
- Serve curried chicken salad atop the lettuce leaves.
