Curry Chicken Salad: Mediterranean Diet Recipes

Garlicky Curry Chicken Salad with Currants

Ingredients
  

  • 1 grilled chicken breast (chopped)
  • 1 stalk celery (chopped)
  • 1/4 cup toasted hazelnuts (chopped)
  • 1/4 cup currants
  • 1/4 cup mayonnaise (to start)
  • 1/4 tsp curry powder
  • 1/8 tsp onion powder
  • 1/4 tsp aleppo pepper
  • 2 scallions, thinly sliced
  • Salt & Pepper to taste
  • 4 large lettuce leaves

Instructions
 

  • Mix together all ingredients except the lettuce
  • Serve curried chicken salad atop the lettuce leaves.
