Crunchy Spicy Chickpeas

These crunchy chickpeas make for a great appetizer or snack. We highly recommend that you offer these up to your guests at your next gathering. We could eat these by the handfuls. They are seriously addicting!

Crunchy Spicy Chickpeas

Ingredients
  

  • 1 large can chickpeas rinsed and drained (~29 ounces),
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat oven to 400 degrees F.
  • Let drained chickpeas sit in a colander for about 10 minutes to dry. Line a small bowl with a paper towel. Pour chickpeas in bowl. Pat chickpeas dry with paper towels. The drier the chickpeas, the crisper they will get.
  • Pour chickpeas in a dry bowl. Add olive oil, salt, pepper, paprika, and garlic powder. Mix well.
  • Pour chickpeas onto a baking sheet. Spread them so that they are all in a single layer.
  • Bake for 25 to 40 minutes. They should be somewhat crunchy when removed from oven. They will get crunchier as they cool. Be careful not to burn.

    It reminded me of a dish my grandmother used to make. When there was leftover “cocido” from the previous day, she would sauté the chickpeas in a pan over high heat with bits of ham and chicken from the “cocido”, a drizzle of olive oil, black pepper, and sweet paprika. The ingredients would toast together, creating an incredible flavor. As my grandmother and mother used to say, food should not be wasted. I continue their “tradition” of “recycling” dishes out of social responsibility and of course, to save money.

    “Cocido Andaluz” is a delicious and hearty stew that originates from the Andalusia region in southern Spain. It is made with a variety of vegetables, such as carrots, potatoes, and cabbage, along with chickpeas and flavorful meats like chicken, beef, pork, and chorizo. The dish is cooked slowly in a large pot with garlic and other seasonings until everything is tender and the flavors have melded together. This stew is perfect for colder weather and is a great meal to share with family and friends. Its warmth and richness make it a comforting and satisfying dish that is sure to please everyone at the table.

    Still yummy enough to set the bowl next to me and eat handful after handful while I read.
