Beef with Spinach in the Skillet (Greece)

Spinach, like most dark leafy greens are eaten daily in the Mediterranean Diet.  It is an anti-inflammatory that has been shown to decrease risk of cancer, eye issues, diabetes, and high blood pressure.  On the Greek island of Crete, we cultivate spinach in our gardens, and only eat it seasonally.   Spinach is a winter vegetable here and is traditionally cooked in lots of different ways. This recipe is the perfect combination of super easy and super delicious and is done in under an hour.  Serve with a salad and/or some bread and a glass of red wine.  Enjoy!

Beef with Spinach in the Skillet (Greece)

Ingredients
  

  • 1 1/2 pounds lean beef, cut into cubes
  • 1 cup onion, shredded
  • 1 cup extra virgin olive oil 
  • 10 green onions (scallions), cut into rings
  • 1 tsp dry mint
  • 1/2 cup fresh dill, chopped
  • 1 cup tomatoes, chopped
  • salt and pepper, to taste
  • 2 pounds spinach
  • 1 cup water

Instructions
 

  • In a deep pot, sauté meat, onions and olive oil for 5 minutes. Stir in green onions, mint, dill, tomatoes, salt and pepper. Simmer for 20 minutes.
  • Add spinach and water. Stir well and cook for an additional 20 minutes, or until meat is tender. Serve warm.
