Try this delicious recipe for Italian green beans that is full of traditional flavors and takes just a half an hour to make.
Spicy green beans, tomatoes and garlic stew is an evergreen vegetable dish of Italy and it’s great both as a side and on its own. Moreover, it’s extremely healthy and filling!
Even better, the best part of this stew is that is completely effortless to make. All you have to do is prepare all the raw ingredients, put them into a pot, cover with a lid and wait. The heat and the released steam will work their magic and 30 minutes later you will have a great dish ready to serve!
This vegetarian recipe is a traditional dish from north-western Italy, and is prepared especially during spring, when green beans are at their absolute best. That being said, it is not uncommon to eat it during the rest of the year, especially if paired with some kind of meat or fish.
Since this dish is very simple and has very few ingredients, to make it perfect you should use the best products you can find, especially when it comes to the tomatoes. There is nothing worse than a watery tasteless tomato that adds no flavor at all to your dish! In my opinion the best varieties are plump San Marzano or Datterini, but any kind of sweet heirloom small tomatoes will work great.
Finally, the traditional version of this dish is made with a special variety of pole beans larger and flatter than the most common variety, but this recipe will work perfectly well with any kind of green beans you can find at your local food store or vegetable market. Snow peas are a great alternative as well!
Italian Green Beans with Tomatoes and Garlic
Ingredients
- 1 pound fresh green beans
- 10 oz cherry tomatoes
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, lightly smashed
- 1/4 cup white wine
- 1 dry chili pepper (or more if you like)
- Salt, to taste
Instructions
- Wash the beans and the cherry tomatoes. Trim away the ends of the beans and cut the tomatoes in half.
- Add all of the ingredients to a small pot. Cover with a tight lid and cook on medium heat for 25 to 30 minutes, stirring occasionally.
- When the beans are cooked through, if the sauce is too thin turn the heat on high and stir for a few more minutes until it thickens.
- Serve immediately.
