Our 10 Favorite Winter Soups
Pumpkin Soup with Sautéed Mushrooms
Cooking with pumpkin sometimes takes a healthy imagination. But, once you find the right ingredients you will love the results. This recipe for pumpkin soup includes sautéed mushrooms and is an Italian classic brought to us by Giorgia Fontana.
Spanish Tuna Soup (Marmitako)
Tuna Marmitako is a basquiat traditional dish that hits all the right notes: delicious, easy and super healthy. It’s a light soup paired with fresh fish (in this case tuna) which can be made in under 40 minutes and will always turn out great – plus you can make it in just one pot. For the best flavor profile try to find dried pepper paste (pasta de pimiento choricero), but if this is not a possibility, depending on your location, you can replace it with tomato paste and smoked paprika.
Italian Minestrone Soup with Pesto
You will love this warming Italian soup with pesto and vegetables. Serve it hot with a slice of your favorite crusty bread.
Garlic Soup with Egg and Croutons (Spain)
Spanish Garlic soup originates from the Castilian region in the interior of Spain, specifically in the small area of Zamora. Traditionally, this soup was a typical lunch for humble people, which is why the ingredients are so simple and inexpensive. With only a few steps, the combination of garlic, olive oil, paprika and bread creates a delicious, nourishing soup that is perfect for chilly winter days.
Moroccan Fish Stew with Fresh Herbs (Morocco)
Nothing feels more authentically Mediterranean than sitting in a restaurant overlooking the Mediterranean Sea while enjoying a fish stew from fish that was caught that morning right next to the restaurant. During the winter months, preparing this soup not only warms my bones but reminds me of a day by the sea. This tasty stew is often served with wine, salad and other vegetables cooked in extra virgin olive oil.
Tuscan White Bean Soup with Sausage and Kale (Italy)
This Tuscan White Bean Soup with Sausage and Kale will make you feel like you are eating in a small restaurant in Italy. It is the perfect hearty soup for a wintry day. Most beans soups are full of nutrition and this one is no exception: fiber from the beans and kale; vitamins A, K and C from the kale; protein from the beans and sausage and healthy fat from the extra virgin olive oil. Although, I don’t eat sausage often, when I do I try to get uncured sausage from grass fed animals. This makes for a much healthier sausage. This is a great recipe for someone who is being introduced to the Mediterranean Diet as it has a meaty taste to it, but is also packed with lots of healthy vegetables, beans and herbs.
Moroccan Harira (Lentil, Chickpea and Tomato Soup)
Harira is one of the most typical and famous soups in Morocco. Many Moroccan families cook it at least once a week for dinner, but it also makes a great breakfast. When this winter soup is complete, they like to serve Harira with bread, dates or figs. Also, a splash of fresh lemon juice suits it very well.
Greek White Bean Soup with Orange Slices and Olive Oil
White bean soup is great for lunch or dinner. It is often eaten with a Greek salad, crusty bread and some wine. The soup is vegan and if you want to keep your meal vegan then serve with a simple salad topped with Greek dressing. It also goes well with sautéed swiss chard or spinach with feta and lemon.
Spiced Moroccan Meatballs and Veggies
Also known Tagine Kefta, the spices in this recipe give it a unique Moroccan flair. The mix of fresh cilantro with cumin, chili powder, and paprika impart a delicious savory flavor. Don’t let the long list of ingredients fool you into thinking that this is a difficult recipe. It consists of chopping veggies, making meatballs, and then mixing everything together and letting it stew. Interested in learning more about kefta? click here.
Mediterranean Fish Stew
Finally, this simple recipe for Mediterranean Fish Stew can be made quickly and is sure to keep you warm! The simplest side item to serve Mediterranean fish stew with is some bread and a Greek salad. We would often have a glass of wine and some tzatziki as well. This is my favorite of all the winter soups.
I made this dish and it was wonderful and my husband loved it as well. Will defiantly make it again.
I made the fist stew this week and it was delicious. I only made a half batch because I live alone but next time (soon) I am making the whole batch. Just what I needed and better than chicken noodle soup for the soul.
