Versatile tuna patties

You can also make them a little thicker and enjoy them between two salad leaves, tomatoes and onions and eat them like a light burger. Do not hesitate to make a homemade tzatziki to accompany them, it goes very well or just top with plain yogurt or sour cream. Finally, for the evenings with summer friends, make these patties in small balls and bake them in the oven, they will be crispy and delicious dipped in a creamy sauce.

Tuna Patties Fried in Olive Oil (France)
Ingredients
- 2-7 ounces cans tuna
- 1/3 cup bread crumbs
- 2 shallots, chopped
- 1 tbsp parsley, chopped
- 3 tbsp chives, chopped
- 1 tbsp scallions, chopped
- 1/3 cup parmesan, grated
- 1/3 cup all purpose flour + 2 Tablespoons
- 1 tbsp sour cream
- 1 egg
- Salt and pepper, to taste
- 2 tbsp extra virgin olive oil
Instructions
- Drain the tuna and place it in a bowl, add all the ingredients except the 2 tbsp of flour and the olive oil. Mix well.
- Place the 2 Tablespoons of flour on a small plate. Form medium patties, place them in the flour and cover them lightly with it.
- Heat a frying pan on medium heat and add the olive oil. Cook the patties about 7 minutes on each side until lightly brown.
This tuna recipe is very tasty. These could pass for mock crab cakes if you use albacore in spring water. Now in my standard rotation for sea food night.
These are so delightfully tender and less fishy than salmon burgers!
We had them like burgers, but with a cabbage slaw (generously applied) instead of lettuce. Was like having fish tacos on a bun
